Description

This moist chocolate chip banana bread is made with sweet bananas, Greek yogurt, maple syrup, warm cinnamon, and melty semi-sweet chocolate chips for the ultimate homemade quick bread.   • 3 large overripe bananas, mashed
  • 1 large egg (or 1/4 cup unsweetened applesauce for an eggless or vegan version)
  • 1/3 cup plain Greek yogurt (or plain plant-based yogurt)
  • 2 tablespoons melted butter (or melted coconut oil for a vegan version)
  • 1/3 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon (optional but recommended)
  • 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas until mostly smooth. Add the egg, Greek yogurt, melted butter, brown sugar, maple syrup, and vanilla extract. Stir until well combined.
  3. Add the baking soda, cinnamon, salt, and whole wheat flour. Mix just until no dry streaks remain. Avoid overmixing.
  4. Fold the chocolate chips into the batter. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  6. Cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy warm or at room temperature.

Notes

  • The riper the bananas, the sweeter and more flavorful your bread will be.
  • For an eggless version, substitute ¼ cup unsweetened applesauce for the egg.
  • To make this recipe vegan, use applesauce, plant-based yogurt, vegan butter (or coconut oil), and dairy-free chocolate chips.
  • Don’t overmix the batter or the bread may become dense.
  • If the top begins browning too quickly, loosely tent the loaf with aluminum foil during the last 10–15 minutes of baking.
  • Store at room temperature for up to 3 days, refrigerate for 1 week, or freeze for up to 3 months.
